Sauce, Romesco - Atkins Recipe
Ingredients:
3 tbsp slivered almonds 1/2 cup olive oil, divided 1 slice atkins bread 2 clove garlic 1 roasted red pepper, (jarred is fine), dry 1 medium tomato, coarsely chopped 2 tbsp sherry wine vinegar, or red wine vinegar 1/2 tsp red pepper flakes
Instructions:
A wonderful Catalan sauce that goes with just about anything: meat, fish, poultry or hearty greens
1. In a small skillet over medium heat, sauté almonds until golden, about 3 minutes. Place in a food processor. Heat 1 tablespoon olive oil in skillet. Fry bread slice until golden; break into pieces and add to almonds.
2. Start processor, add garlic, and process until almonds, garlic, and bread are finely chopped. Add red pepper, tomato, vinegar, and red pepper flakes; process until smooth. Add remaining oil in a steady stream; process just until combined.
