Shrimp Salad, Creole - Atkins Recipe
Ingredients:
2 medium scallion, 1in pieces 1/2 stalk (40 g) celery, 1in pieces 2 tbsp parsley, coarsely chopped 2 tbsp canola oil 1 tbsp prepared horseradish 2 tsp white wine vinegar 1 clove (3 g) garlic, cut in half 2 tsp dijon mustard 1 tsp paprika 1/2 tsp salt 1/4 tsp white pepper dash of hot sauce 2 lb medium shrimp, cooked, peeled, de-veined
Instructions:
Our mayo-less shrimp salad was inspired by the vibrant flavors of Creole cuisine.
1. In a food processor, process all ingredients (except shrimp) until fairly smooth. Transfer to a large bowl.
2. Toss shrimp in dressing. Chill one hour. To serve, line 6 plates with shredded lettuce and divide shrimp on top.
