Soup, French Onion - Atkins Recipe










Ingredients:

3 tbsp butter
2 medium onions, thinly sliced
2 tbsp atkins bake mix
2 can reduced-sodium chicken broth
1/2 cup white wine, mixed with
1 cup water
4 slice atkins white bread, &1
1/2 lb gruyere cheese, shredded

Instructions:

&1: crusts trimmed, toasted (see Atkins Tips below)

The secret to onion soup is letting the onions brown s-l-o-w-l-y, to
concentrate their sweetness. If you prefer your cheese over instead of
under the soup (i.e. gratinee), place a bread slice over the soup in
flameproof bowls, top with cheese and broil 3 to 4 minutes until the cheese
browns and bubbles.

1. Melt butter in a large soup pot over medium-low heat. Add onions; cook
35 minutes, stirring occasionally, until onions are very soft and golden
brown. Stir in bake mix.

2. Slowly whisk in one can of chicken broth; pour in remaining can. Add
wine mixture. Bring to a boil over high heat; reduce heat to low and
simmer, covered 20 minutes.

3. Heat four soup bowls. Place one slice of toast at bottom of each bowl.
Top with a quarter of the cheese. Ladle soup into bowls.

Save the crusts to make bread crumbs.
