Soup, Guacamole - Atkins Recipe
Ingredients:
1/2 cup cilantro leaves 2 medium scallion, 1' pieces 1 pepper jalapeno, seeded, coarsely chopped 1 can chicken broth, reduced sodium 1/2 cup tomato juice 1/4 cup lemon juice 2 small hass avocados, coarsely chopped tabasco sauce (optional) salt
Instructions:
Don't knock it until you've tried it. This cold blender soup can be made in 10 minutes, and it's a delicious first course for any summer meal.
1. In a food processor, pulse cilantro, medium scallion, and pepper until finely chopped, scraping down sides of bowl as necessary.
2. Add chicken broth, tomato juice, lemon juice, and avocados. Process until smooth. Add Tabasco and salt to taste. Refrigerate 1 hour for flavors to blend. (May be made up to 8 hours ahead.)
