Ingredients:
2 tbsp oil
1/2 medium onion, thinly sliced
1 package sauerkraut, drained, rinsed
4 hot dogs, sliced
2 can reduced-sodium beef broth, plus
1 can water
2 tsp mustard
2 packets Splenda
1 leaf bay
salt and pepper
Instructions:
There are many versions of Hot Dog Soup, a favorite with kids of all ages,
and ours has it all: hot dogs, sauerkraut and mustard. Slice the hot dogs
thinly, especially when serving young children.
1. Heat oil in a medium soup pot over medium-high heat. Add onion and cook
5 minutes, until softened. Stir in sauerkraut, hot dogs, broth, water,
mustard, sugar substitute and bay leaf.
2. Simmer 5 minutes for flavors to blend. Remove bay leaf. Add salt and
pepper to taste.
