Soup, Kielbasa & Cabbage - Atkins 2 Recipe
Ingredients:
2 tbsp oil 1/2 small onion, chopped 3 cup green cabbage (~.5 small head), shredded 2 small turnips, peeled, 1in cubes 1 can chicken broth, reduced sodium, plus 2 can water 1 leaf bay 1/2 tsp caraway seed 1/2 tsp salt 1/2 packet splenda 3/4 lb kielbasa 1 tsp vinegar, wine, red salt and pepper
Instructions:
The grown-up version of Hot Dog Soup.
1. Heat oil in large saucepot over medium heat. Cook onion 5 minutes until softened. Add cabbage, turnips, broth, water, bay leaf, caraway seeds, salt, and sugar substitute. Bring to a boil; reduce heat and simmer, partially covered 20 minutes, until vegetables are tender. Remove bay leaf.
2. Cut sausage in 1/2' slices. Cook 2-3 minutes, until lightly browned. Stir sausage slices and vinegar into soup. Add salt and pepper to taste.
