Spinach, Creamed, Manhattan-Style - Atkins Recipe
Ingredients:
1 tbsp butter 1/2 small onion, chop 2 medium scallion, chop 1/2 cup chicken broth, reduced sodium 1/2 cup heavy cream 1/2 tsp salt 1/2 tsp black pepper 1/8 tsp freshly ground nutmeg 2 package frozen leaf spinach, thaw, squeeze dry
Instructions:
In New York, this is a much-requested standard steak-house side. One taste and you'll know why. Freshly ground spices (pepper, nutmeg) make a big difference in this recipe.
1. In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.
2. Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.
