Spinach-Cheese Bake Recipe
Ingredients:
4 eggs 3/4 tsp salt 1/2 tsp pepper 2 package frozen chopped spinach - (10 oz ea), thawed, and squeezed dry 1 container whole milk cottage cheese 6 oz shredded sharp cheddar cheese = (1 1/2 cups packed) 4 green onions, chopped 3 tbsp Atkins Bake Mix 2 tbsp chopped fresh parsley
Instructions:
Heat oven to 350 degrees. Butter an 8-inch square baking dish. Set aside. In a large bowl, beat eggs with salt and pepper. Add spinach, cottage cheese, cheddar, green onions, bake mix and parsley; mix well.
Pour egg mixture into prepared dish. Bake 45 minutes, until center is set and top is golden brown. Let bake sit a few minutes before cutting into squares.
This recipe yields 8 servings.

Comments: For variety, you can try feta or ricotta cheese in place of cottage cheese and add some chopped fresh dill. If you use feta, reduce the amount of salt.
