Stew, Veal W.Mushrooms & Smoked Provolone - Atkins Recipe




Ingredients:

2 lb veal stew meat, 1 1/2' cubes
1 tsp salt
1/2 tsp pepper
2 tbsp atkins bake mix
3 tbsp butter, divided
2 tbsp oil, divided
2 cup portobello mushrooms, sliced
3 stalk celery, diced
1 medium onion, chopped
4 garlic cloves, chopped
1 tsp paprika
1 can chicken broth, reduced sodium
3/4 cup smoked provolone/mozzarella, shredded
1/4 cup fresh parsley, chopped

Instructions:

This recipes showcases the versatility of veal.

1. Sprinkle veal with salt, pepper, and bake mix. In a Dutch oven (or large
nonstick skillet with a cover) melt 1 tbs butter and 1 tbs oil over medium
heat. Saute half the veal until lightly browned. Transfer to a platter;
repeat with remaining veal.

2. Melt remaining tbs of butter in Dutch oven. Add mushrooms, celery, onion
and garlic to Dutch oven. Cook vegetables 10 minutes, stirring
occasionally, until softened.

3. Add paprika, broth, parsley and veal; bring to a simmer. Cover, and cook
over low heat 45-55 minutes, until veal is tender. Just before serving,
stir in cheese and parsley.

Prep time: 20 minutes
