Stir-Fry, Asparagus W.Basil - Atkins Recipe
Ingredients:
2 tbsp soy sauce 1 tbsp water 1 packet sugar substitute 1 tbsp canola oil 1 pepper jalapeno, seed, chop fine 3 clove garlic, chop fine 1 1/2 lb asparagus, lightly steamed, 1' piece 1/2 cup fresh basil leaves, slice thin
Instructions:
Asparagus is the premiere spring veggie. It is at its most tender and sweet early in the season. In this recipe, its sweetness is balanced with the peppery taste of basil.
1. In a small bowl, mix soy sauce, water and sugar substitute.
2. Heat oil in a large skillet over medium-high heat. Add pepper and garlic; cook 30 seconds until garlic is lightly colored. Stir in asparagus; cook, stirring, 30 seconds. Add soy sauce mixture and basil; cook just until basil wilts.
