Surprise Corn Bread Recipe
Ingredients:
1 cup water 3/4 cup canola oil 3 eggs 1 package Quick & Easy Corn Muffin and Bread Mix - (12 oz) 1 cup grated yellow squash
Instructions:
Heat oven to 350 degrees. Grease a 9- by 5-inch loaf pan. In a bowl combine water, oil and eggs. Add the mix and beat with a mixer on low for 1 minute, until well blended. Scrape down sides of bowl and mix 1 more minute. Add the squash and mix with a spatula until well combined.
Pour into prepared pan. Bake 50 to 55 minutes until skewer inserted in center comes out clean. Cool in pan on wire rack 15 minutes. Turn out onto wire rack and cool completely.
This recipe yields 18 servings.
