Swordfish Stea.ks, Mediterranean - Atkins Recipe
Ingredients:
1/4 cup olive oil 2 tbsp fresh lemon juice 1 tsp dried oregano, grated 1/2 tsp lemon rind 1/2 tsp dried rosemary, crumbled 1/2 tsp salt 1/2 tsp pepper 1 1/2 lb steak swordfish, ~1' thick
Instructions:
Just 30 minutes marinating time at room temperature guarantees flavorful, moist fish.
1. Mix olive oil, lemon juice, oregano, lemon rind, rosemary, salt and pepper in a resealable plastic bag. Add swordfish steaks; toss to coat. Marinate at room temperature 30 minutes, turning occasionally.
2. Prepare a medium grill. Cook steaks about 5 minutes per side for medium doneness.

Bake/Cook time: 10 minutes
