Veal Chops, Grilled Lemon-Herb - Atkins Recipe




Ingredients:

3 tbsp olive oil
2 tbsp fresh lemon juice
3 clove (3 g) garlic, pushed through a press
1 1/2 tsp dried oregano leaves, crumbled
1 tsp black pepper
4 chop veal rib or loin chops, 1' thick

Instructions:

Veal can be blanda 20-minute garlic-lemon marinade takes care of that.
Because veal is so low in fat, its juicier if cooked to medium, rather than
well-done.

1. Combine olive oil, lemon juice, garlic, oregano and pepper; add veal
chops and toss to coat. Let sit 20 minutes at room temperature or up to 2
hours in the refrigerator.

2. Prepare outdoor grill according to manufacturers directions for medium
heat or heat broiler. Grill or broil chops 12 to 15 minutes for medium
doneness, turning once halfway through cooking time.
