Waffles, Buttermilk Cinnamon - Atkins Recipe










Ingredients:

1 cup Atkins bake mix
3 packet sugar substitute
1 tbsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
3/4 cup buttermilk
3 large egg, lightly beaten
6 tbsp butter, melted
3 tbsp Atkins vanilla sugar free syrup
cold water as needed

Instructions:

The acid in buttermilk reacts with the baking soda to produce a taste
similar to sourdough bread. Buttermilk is lower in carbs than regular milk.

1. Heat waffle iron. Whisk together bake mix, sugar substitute, baking
powder, baking soda, and cinnamon. Add buttermilk, eggs, butter and syrup;
mix well. Batter will be stiff. Add cold water 1 tbs at a time until batter
is spoonable.

2. Place approximately 3 tbs of batter in center of a waffle iron. Cook
according to manufacturer's instructions until crisp and dark golden brown.
Repeat with remaining batter.

Prep time: 10 minutes

Bake/Cook time: 4 minutes
