White Pizza With Broccoli Recipe




Ingredients:

1 box Atkins Quick and Easy
Country White Bread Mix - (12.6 oz)
5 tbsp extra-virgin olive oil, divided
2 garlic cloves, finely chopped
2 cup cooked broccoli florets
3/4 cup whole milk ricotta cheese
1/2 cup shredded mozzarella cheese
2 tbsp grated Parmesan cheese
1/2 tsp dried oregano

Instructions:

Combine bread mix and yeast in a large bowl. Add 1 1/2 cups warm water and
3 tablespoons olive oil. Mix with a spoon to form a soft dough. Knead
gently for one minute; shape into a ball. Cover with plastic, and let rise
for 1 hour or until dough is doubled in size.

While dough is rising, heat 1 tablespoon oil in a large skillet over medium
heat. Cook garlic 30 seconds, until starting to color. Add broccoli and
cook 2 minutes, until heated through. Remove from heat; stir in ricotta
cheese.

Heat oven to 450 degrees. Shape pizza dough into a 14-inch round and
transfer to a wire mesh pizza screen or a pizza pan with holes. Spread
broccoli mixture over dough leaving a 1/2-inch border. Top with mozzarella
and Parmesan cheeses. Sprinkle with oregano and remaining tablespoon of
oil.

Bake pizza 20 to 22 minutes, or until puffed and nicely browned.

This recipe yields 8 servings.
