White Pizza With Broccoli Recipe
Ingredients:
1 box Atkins Quick and Easy Country White Bread Mix - (12.6 oz) 5 tbsp extra-virgin olive oil, divided 2 garlic cloves, finely chopped 2 cup cooked broccoli florets 3/4 cup whole milk ricotta cheese 1/2 cup shredded mozzarella cheese 2 tbsp grated Parmesan cheese 1/2 tsp dried oregano
Instructions:
Combine bread mix and yeast in a large bowl. Add 1 1/2 cups warm water and 3 tablespoons olive oil. Mix with a spoon to form a soft dough. Knead gently for one minute; shape into a ball. Cover with plastic, and let rise for 1 hour or until dough is doubled in size.
While dough is rising, heat 1 tablespoon oil in a large skillet over medium heat. Cook garlic 30 seconds, until starting to color. Add broccoli and cook 2 minutes, until heated through. Remove from heat; stir in ricotta cheese.
Heat oven to 450 degrees. Shape pizza dough into a 14-inch round and transfer to a wire mesh pizza screen or a pizza pan with holes. Spread broccoli mixture over dough leaving a 1/2-inch border. Top with mozzarella and Parmesan cheeses. Sprinkle with oregano and remaining tablespoon of oil.
Bake pizza 20 to 22 minutes, or until puffed and nicely browned.
