Carrot Cookies Recipe
Ingredients:
1 egg 1/2 cup brown sugar 1/2 cup sugar 1/4 cup oil 1 tsp vanilla 3/4 cup carrot, shredded (1 large) 1 cup flour 1 cup oats, quick cooking 1 tsp baking powder 1 tsp cinnamon 1/2 tsp nutmeg 1/4 tsp salt 1 cup raisins
Instructions:
Preheat the oven to 375 and spray 2 baking sheets with Pam. Beat the egg, sugars, oil and vanilla with an electric mixer until smooth. Add the shredded carrot and beat again. Add the flour, oats, baking powder, cinnamon, nutmeg and salt and beat until well mixed. Add the raisins and stir to combine. Drop the batter by round tsp about 2" apart onto the baking sheets and bake for 10 to 12 minutes or until the cookies are lightly browned. Cool on wire rack. Per cookie: 48 calories and 1.3 grams fat. Source: Dr Cookie Cookbook

The metaphor of the melting pot is unfortunate and misleading. A more accurate analogy would be a salad bowl, for, though the salad is an
entity, the lettuce can still be distinguished from the chicory, the tomatoes from the cabbage. --------
